I love simple salads. Here is one I made up this morning: Simply slice a plum (cut out the hard center with a pairing knife). Then layer prosciutto and arugula between the slices. Top up with a drizzle of olive oil! Easy and so delicious! What do you think?

Easy snack for your meal prep day! Slice a banana into a mini-muffin pan. Cover some (or all) with melted almond butter. Put in a ZipLock and keep them in the freezer. Pop them out for a quick frozen treat. Beware- they thaw fast! 🙂
