Popsicles— the new cupcake?

During these hot summer months, you might crave something cold and refreshing… like a popsicle. That’s where Suzy Naumann comes in… Naumann is the owner of Pop Culture; a gourmet Popsicle business with a flair for local flavor. When I first met Suzy, she climbed out of a vintage baby blue Volkswagen Beetle with her […]

Black Coffee and Unsweetened Oatmeal

When I started my Whole30 challenge 30 days ago, I never (ever in a million years) would have guessed my celebratory meal of choice would be black coffee and unsweetened oatmeal. “Are you kidding me?”- the pre-Whole30 me would say. “Black coffee is disgusting and oatmeal with no sugar? Are you insane?!” Well, I’m not kidding […]

Pumpkin Cookie Dough

Eating globs of cookie dough by the spoonful (completely guilt free) is something dreams are made of! This doughy recipe of delight is something I made up during a sugar craving meltdown. Instead of reaching for a tray of place-and-bakes, I did a little research and made up these easy options that will cure any […]

Warmed Fig and Chicken Salad

Only 2 days to go until I’ve completed my Whole30 challenge! I’ve leaned a lot about cooking these past 28 days. I’ve bee channeling my wonderful (super southern) grandmother while I cook. Elizabeth Davenport Askins (Nanny) was THE BEST cook! She never measured anything… and her recipes always contained a “stick of buddah”…. I made […]

Easy Whole30 Lunch Box

I wake up at 2am every morning. (Well….2:17am after a few visits with the snooze button) My work day starts at 3am! The morning show starts at 4:30am…. That means “camera ready” and WIDE AWAKE (preferably genuinely happy) by 4:20. Before my Whole30 endeavor; my morning was made up of a vending machine Starbucks “frappe” […]

Frozen Almond-Butter-Banana Minis

Easy snack for your meal prep day! Slice a banana into a mini-muffin pan. Cover some (or all) with melted almond butter. Put in a ZipLock and keep them in the freezer. Pop them out for a quick frozen treat. Beware- they thaw fast! 🙂

Easy Baked Apple “Dessert” – Whole30 Approved

So easy. So healthy! Slice two apples and arrange in a brownie pan. Sprinkle with cinnamon and add dollops of coconut spread (taste like butter- but better for you). Bake on 350 degrees for 25 to 30 minutes! Yummmmmm!!!   **Note***  The word “dessert” is a bad word to the die-hard-whistle-blowers in the Whole30 community. […]

Whole30 Starbucks Order

So, what the heck do you order at Starbucks when you are on your Whole30? This was my breakfast/power snack this morning; a hard boiled egg and a (unsweetened) Passion Fruit Tea! The best thing to order is definitely an iced *UNSWEETENED* passion fruit tea while you’re on the Whole30. Black coffee is fine, but […]

Meal Preppin’

I’m a prepper now. I’m prepping for those terrible days when I’m hAngry and have nothing to eat. Sunday was my first time preppin’! I hard-boiled eggs, sliced and diced vegetables and made some egg muffins. Pretty excited! Hope I can keep the habit going! I also went all Chocolate Covered Katie and made some […]

… I thought I was out of food.

I’m out of food. Or at least I thought I was until I rummaged and scavenged through my refrigerator. I found a lone portobello mushroom from a recipe past… and a few asparagi. Rummaged some more and found a little spinach and made used my final 3 eggs. Then is was time to get relatively […]

Surviving “National Donut Day” during my Whole30

I’m a news reporter. That means EVERY day is different. Some days I’m covering something dark and sad… and other days I’m assigned to cover stories like “National Donut Day!” Covering National Donut Day couldn’t have come at a worse time. I’m right in the midst of my Whole30 challenge!!! That means NO SUGAR (and […]

CHOCOLATE CHILI NIGHT!!

What? CHOCOLATE? With….ground beef?

Whole 30 challenge- first few days

A few meals… Using lots of eggs… Loving avocado, locks and trying new fruits. These are pictures from my first BIG Whole30 shopping trip… Expensive start….but most of the stuff will last me a long time. I used my first day of WHOLE30ing to make egg muffins! Easy as can be. Most are in the […]

I’ve started the Whole30!!

I can’t believe I’m actually doing this… One of my best friends suggested I read It Starts With Food. The book is wonderful and I recommend it to anyone who is ready to get serious about being healthy. Part of the book challenges you to change your life and eating habits over an intensive 30 […]

LARABAR – My new Obsession

One of my (super-healthy) friends loves LaraBar. I tried them… and let me tell you, they are delicious! You can find them in the health-foods aisle at the grocery store. (The area with Slim-Fast, Cliff Bars..etc) My favorite flavors are Blueberry Muffin…. Coconut Cream Pie (you will like it even if you don’t like coconut–it […]
